I love garlic. And if you’re like most people, I’m guessing you love garlic too! Then this soup is perfect for you. Have it chilled or warm, it’ll ward off vampires either way.
What’s not to love? Not only is it – appropriately – on the ingredient list of 99% of great savory dishes, it’s also a superfood. There are many health benefits of garlic. They include boosting immunity, improving cholesterol levels, and it even contains powerful antioxidants!
It’s a make ahead dish, but it’s work the effort for that superfood punch! You can add sliced grapes as on option at the end. I’m not a fan, but you might want to give it a try.
Let’s get into the recipe:
Ingredients
- 3 to 4 slices stale baguette (or white bread)
- 5 cloves garlic
- 1 teaspoon salt
- 5 tablespoons extra-virgin Spanish olive oil
- 3 to 4 tablespoons Spanish sherry vinegar
- 4 cups of chicken broth
- Sliced Garlic to toast
Steps to Make It
- Peel the garlic. If you’re using French-style or rustic bread, trim the crusts.
- Place the bread in 1 to 2 cups of chicken broth and soak for 5 minutes.
- While it is soaking, combine the garlic and almonds in a food processor or blender.
- Blend until smooth.
- Add the bread and salt into the blender and blend until smooth.
- While the blender is running, drizzle in olive oil, vinegar, and the rest of the chicken broth. the water.
- adjust seasoning to taste.
- Place in container and chill in the fridge for at least 2 hours.
- Serve chilled with slivered toasted garlic on top for garnish.

Chilled Garlic Soup
Ingredients
- 3 to 4 slices stale baguette or white bread
- 5 cloves garlic

- 5 tablespoons extra-virgin olive oil
- 3 to 4 tablespoons White wine vinegar
- 4 cups of chicken broth
Instructions
- Peel and smash garlic.
- Place bread in 1 to 2 cups chicken broth to soak
- Sautee garlic in pan to release fragrance
- Place garlic and bread in blender and pulse until smooth.
- Add olive oil, vinegar, chicken stock, and blend until smooth.
- Season to taste.
- Chill at least 2 hours.
- Serve chilled with slivered toasted garlic to garnish
