Cajun Chicken with Avocado

This cajun chicken with avocado salad recipe only takes 28 minutes to prepare and cook, making it perfect for beginners. It makes 4 servings, so can easily be stored in the fridge and eaten in the coming days.
Ingredients
- 4 small chicken breasts (approximately 180g each)
- Steamed greens (250g)
- Small pinch of cayenne pepper
- 1 Tablespoon of paprika
- 1 avocado, diced
- 1 long green chilli. Remove the seeds and slice thinly (use sweet peppers as a mild alternative)
- 2 tablespoons lime juice
- 2 tablespoons fresh chives chopped
- Olive oil
- Pinch of black pepper
- Pinch of salt
Method
- Mix the paprika and cayenne pepper in a bowl
- Cut each chicken breast into thin slices (three is ideal), then toss the chicken in the combined paprika and cayenne to lightly coat. Set aside.
- Place avocado, lime, chili, and chives in a bowl. Add salt and pepper along and mix gently to combine the salsa.
- Heat a large frypan over high heat and add olive oil.
- Cook chicken until cooked, about 2 minutes on each side. Stand for 3 minutes.
- Serve chicken on beans and salsa, and drizzle with any remaining juices.

Ingredients
- 4 small 180g each Free Range Chicken Breast
- 1 tablespoon sweet paprika
- Pinch of cayenne pepper
- 1 avocado flesh cubed
- 2 tablespoons lime juice
- 1 long green chilli seeds removed, thinly sliced lengthways
- 2 tablespoons freshly snipped chives
- Olive oil spray
- 250 g steamed green beans
Instructions
- Season chicken with paprika and cayenne
- Set aside.
- Place avocado, lime, chilli and chives in a bowl.
- Season and stir gently to combine.
- Set aside.
- Heat a large frypan over high heat and spray with oil.
- Cook chicken,
- Stand for 3 minutes,
- slice chicken.
- Plate green beans, avocado salsa, chicken
- drizzle any remaining juices on top.
