Cajun Chicken With Avocado Salsa

Ingredients

  • 4 small 180g each Free Range Chicken Breast
  • 1 tablespoon sweet paprika
  • Pinch of cayenne pepper
  • 1 avocado flesh cubed
  • 2 tablespoons lime juice
  • 1 long green chilli seeds removed, thinly sliced lengthways
  • 2 tablespoons freshly snipped chives
  • Olive oil spray
  • 250 g steamed green beans

Instructions

  • Season chicken with paprika and cayenne
  • Set aside.
  • Place avocado, lime, chilli and chives in a bowl.
  • Season and stir gently to combine.
  • Set aside.
  • Heat a large frypan over high heat and spray with oil.
  • Cook chicken,
  • Stand for 3 minutes,
  • slice chicken.
  • Plate green beans, avocado salsa, chicken
  • drizzle any remaining juices on top.
