Growing up as a latch key kid, coming home from school and enjoying a pepperoni hot pocket while watching my favorite TV shows was something I always looked forward to. There was just something about eating a pizza in handheld pocket form that was always so fun, not to mention delicious. As an adult, I still have the same love for hot pockets that I always have. Only now, I try to be a bit more careful about what I put in my body. Enter: Keto Pepperoni Hot Pockets, the healthier version of my childhood favorite.
What will I need to make these keto pepperoni hot pockets?
The two components of this delicious recipe are the fathead dough and the filling. For the fathead dough, you will need almond flour, an egg, salt, shredded mozzarella, and cream cheese. For the filling, you will need chopped pepperoni, marinara sauce, and shredded mozzarella. It’s that simple!
As for kitchen tools, you will need a mixing bowl, mixing spoon, cutting board, parchment paper, and a baking sheet. These keto pepperoni hot pockets bake in 15 minutes and take under 30 minutes to make from start to finish, so they make a great easy weeknight meal or weekend snack.
How to Make Keto Pepperoni Hot Pockets
For the fathead dough:
- In a large glass bowl, mix together the shredded mozzarella, almond flour, and salt. Microwave on high for 60 seconds or until completely melted.
- Add the cream cheese to the mozzarella mixture and combine with a spoon until thoroughly combined.
- When the dough is cool enough to handle, add in the egg and mix well with your hands.
Assembly:
- Preheat the oven to 400° F
- Cut dough into 4 sections (smaller if you want to make them more like pizza rolls)
- Roll out the dough into a rectangular shape about 8 inches by 4 inches
- Put filling on one side of the dough, leaving room to pinch closed.
- Fold the dough over the filling and pinch the edges so that they fuse shut.
- Place the pockets on a sheet tray lined with parchment paper and bake for 15 minutes.

- 4 Tablespoons Marinara
- 4 Tablespoons Shredded Mozzarella Cheese
Instructions
- Fat Head Dough:

- Microwave on high for 60-90 seconds
- Add the cream cheese to the mozzarella mixture and combine with a spoon.
- when the dough is cool enough to handle, add in the egg and mix well with hands.
- Hot Pocket:
- Preheat the oven to 400F.
- Cut dough into 4 sections (smaller if you want to make them more like pizza rolls)

- If you don’t eat pork, there are a number of things you can substitute it for. You can use turkey pepperoni or plant-based pepperoni, or omit the pepperoni altogether and make it a keto cheese hot pocket.
- If you like spice, feel free to add some crushed red pepper to your filling before baking for a little kick.
- This recipe is great for making with your kids as a fun weekend activity and for dinner parties, game day parties, and any other event you can think of!
- My favorite way to eat these keto pepperoni hot pockets is on their own as an appetizer or snack, but you can also serve them as a meal with a side salad or roasted vegetables.
Make Ahead Ideas
There are a few ways you can make these ahead of time to enjoy later:
- If you want to prep your fathead dough ahead of time, you can cover it tightly and leave it in the fridge for up to 3 days before forming into your keto pepperoni hot pockets.
- While I will say this recipe is best when enjoyed straight out of the oven, the hot pockets are also delicious when reheated. For delicious snacks at your convenience, you can make a large batch of hot pockets and freeze them in an airtight bag for up to 3 months.
