For the Fathead Dough
- 1 ¾ cup Shredded Mozzarella Cheese
- ¾ cup Almond flour
- 2 Tablespoons cream cheese
- 1 egg beaten
- Pinch of salt
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
For the Filling
- 4 Tablespoons pepperoni- chopped
- 4 Tablespoons Marinara
- 4 Tablespoons Shredded Mozzarella Cheese
Fat Head Dough:
In a large glass bowl, mix together the mozzarella cheese, almond flour, onion powder, garlic powder, and salt.
Microwave on high for 60-90 seconds
Add the cream cheese to the mozzarella mixture and combine with a spoon.
when the dough is cool enough to handle, add in the egg and mix well with hands.
Hot Pocket:
Preheat the oven to 400F.
Cut dough into 4 sections (smaller if you want to make them more like pizza rolls)
Roll out the dough into a rectangular shape about 8 inches by 4 inches
Put filling on one side of the dough, leaving room to pinch closed.
Fold the dough over the filling and pinch the edges so that they fuse shut.
Place the pockets on a sheet tray lined with parchment paper and bake for 15 minutes.
Serve with marinara for dipping
