You know, sometimes you just need a break from the same old thing. That’s why I love this toast recipe! It has all of your favorite breakfast foods combined in one delicious quick and easy meal: Tomato, avocado and bacon.
The best part is that you can top it with whatever flavors call to you so there are no bad choices!
Wake up on the wrong side of the bed? Tomato bacon avocado toast is the perfect solution. It’s a great way to get your morning started with both healthy fats from the Tomatoes, protein from eggs or powder, fiber in the avocados and satisfying fat and flavor from the bacon.
What are some of the health benefits of Tomato?
Tomatoes are a great source of Lycopene, an antioxidant that reduces the risk of cancer and heart disease. Tomatoes also contain vitamins A, C, E, and K as well as potassium which is good for your bones.
What are some health benefits of avocado?
Avocados have been shown to reduce cholesterol levels due to their high fiber. Fiber helps reduce cholesterol by binding with bile acids, which are created from cholesterol, and removing them from the body. Avocados also contain vitamin E, good for the skin and they’re highly nutritious.
Where are avocados primarily grown?
Avocados are grown in tropical climates, mainly in Mexico and California. They require temperatures of at least 70 degrees Fahrenheit.
So here in New England we cannot grow them in our backyards
How to make Tomato bacon avocado toast:
Ingredients:
- 4 slices of favorite whole grain artisan bread
- 2 tablespoon butter, melted
- 2 ripe avocados, halved and cut into chunks.
- 8 slices of cooked bacon, Chopped into chunks
- 1 package of cherry tomatoes, seeded and cut into quarters
- 2 tablespoon Lime Juice or 2 limes
- Salt and pepper to taste
Instructions:
- Preheat oven to 400 degrees (I used a countertop oven with a toast setting)
- Brush the melted butter on all 4 slices of bread
- Place on baking sheet and place in oven top shelf
- “toast” until your level of darkness has been reached.
Assemble your toast:
- Scoop about half of each avocado onto each piece of toast and spread evenly
- Squeeze juice of ½ of a lime on heach piece
- Sprinkle with about 2Tbsp of the chopped bacon (or about 2 slices)
- Top with chopped tomatoes
- Salt and pepper to taste
