What is lemon curd and where did the idea come from?
Lemon curd is a traditional English custard that is typically served on scones with clotted cream or over ice-cream. It was first created by the famous chef, Charles Ranhofer in 1869 to honor Queen Victoria’s visit of America. It contains eggs butter and sugar but for this recipe, erythritol replaces the sugar for a healthier alternative. The idea came from one of his chefs who had just returned from England after visiting family there.
What’s the difference between lemon pie filling and lemon curd?
Although they are similar, lemon curd and lemon filling are not one in the same. Lemon curd tends to be thicker and richer in flavor than lemon pie filling. Lemon curd is used as a topping for different desserts, but would probably be too rich to fill an entire pie with.

My favorite way to serve lemon curd is to pair it with dairy free chia pudding. The zesty, rich, tang of the lemon curd complements the softer vanilla flavor of the pudding.
What You Need To Make Keto Lemon Curd
- 3 large eggs
- ½ cup powdered erythritol
- ¼ cup freshly squeezed lemon juice
- 2 teaspoons grated lemon zest
- 4 tablespoons softened butter
How To Make Keto Lemon Curd
- In a pyrex bowl sitting over a pan of barely simmering water, whisk together the eggs, sweetener, lemon juice, and lemon zest.
- Whisk continuously until it thickens, which is about 10 minutes. Just when you start to think that you’ve done something wrong and that it won’t ever thicken, BOOM magic happens. Just keep going.
- Immediately remove from heat and add the butter. Once melted continue to whisk until the curd is smooth.
- Place in the fridge until fully chilled before your serve.
