It’s Summertime, and that means cookouts and gatherings. Sports and wings. You know how the story goes. We’re all looking for some easy snacking and sharing foods while we try to beat the heat. However, a lot of these recipes are carb-loaded and can leave us feeling heavy and bloated after. First off, Why Cauliflower?
Cauliflower has a ton of amazing health benefits besides being low in both carbs and calories. Cauliflower has high plant fiber contents which help promote essential digestion and overall gut health.

Being a great source of antioxidants, vitamin C, vitamin K, and vitamin A- this makes it an amazing option for those trying to cut down their carb intake. Also, cauliflower has a very similar texture to chicken when cooked right! It crisps up nicely while remaining juicy and tender on the inside, just like the real deal.
How to Make Buffalo Cauliflower Bites
First, preheat your oven to 400 degrees. Line a large cooking sheet with cooking parchment paper. I used a Silpat, which I absolutly love. Place 1 ¼ cup of pork rinds in a Ziploc bag and crush them! This will help your cauliflower bites crisp up like those breaded tenders, but without the carbs!
Beat 3 eggs in a small mixing bowl. In a separate mixing bowl, combine your pork rinds, teaspoon of paprika, 1 teaspoon of salt and pepper then mix well.
Dredge each of your cauliflower florets in the egg wash then in your dry mixture, making sure to cover the florets completely with bread crumbs. Then, place on your prepared cooking sheet and repeat with the remaining florets.
Bake the cauliflower bites for 25 minutes, turning them midway through cooking. While your florets are roasting, in a separate mixing bowl combine ¼ cup sriracha, ½ cup of Franks, 6 tablespoon of melted butter, and 1 tbsp. soy sauce until smooth.
Once the cauliflower is done, dip them in your buffalo sauce mixture then place them back in the oven to warm through (about 5 minutes). Serve warm, and garnish with fresh cilantro.
To Make the Bleu Cheese Dip
Just mix together, ½ cup of plain greek yogurt, ⅓ cup of crumbled blue cheese, 1 tablespoon of lemon juice, ⅛ teaspoon of garlic powder, then salt and pepper to taste.
