It’s no secret that chocolate chip cookies are some of the most universally loved treats on the planet. When I was a kid, I always loved helping my grandmother make chocolate chip cookies from scratch. To this day, the smell of freshly baked cookies always brings back some of my favorite memories.
Following a keto diet doesn’t have to mean stripping away your favorite indulgences, it just means you have to get a little more creative! That’s where this recipe for keto chocolate chip cookies comes in. All of the delicious decadence of the classic treat, without all the carbs.
What will I need to make these keto chocolate chip cookies?
To make these cookies, you will need butter or coconut oil, granular sweetener, eggs, vanilla extract, almond flour, baking soda, salt, and sugar-free chocolate chips. As for your kitchen tools, you will need an electric stand or hand mixer, mixing bowl, mixing spoon, parchment paper, and a baking sheet.
Allowing about 10 minutes of prep time and 10 minutes for the cookies to bake, this recipe can be completed from start to finish in just 20 minutes. I don’t know about you, but there have been many nights during quarantine when I’ve found myself craving a sweet treat. Because I typically have all of these ingredients on hand, this recipe has come in handy on many occasions this past year, usually accompanied by a good movie and a warm blanket.
How to Make Keto Chocolate Chip Cookies:
- Preheat the oven to 350°F.
- Add softened butter or coconut oil and sweetener to a bowl, then mix with an electric mixer on medium until well combined.
- Add eggs and vanilla extract to the mixture, then mix until combined.
- In a separate bowl, combine almond flour, baking soda, and salt, then mix to combine.
- Add dry ingredients to wet ingredients and mix until combined, then fold in chocolate chips.
- Scoop dough into 18-21 cookies onto a greased parchment paper-lined baking sheet, then flatten them out by pressing down lightly on the tops.
- Bake for 10-12 minutes, then let cool and enjoy.

Make Ahead Ideas

To do this, all you have to do is let the cookies cool completely on the baking sheet, then place them in the freezer (still on the sheet) for about 20 minutes. Once you’ve done this, you can transfer the cookies from the sheet to an airtight Ziploc bag, then freeze them for up to a month. Whenever you’re ready to eat your cookies, just reheat them in the oven and eat up.
